I would go way out on a limb and cast pro wrestler Sgt Slaughter for the role. Call me crazy.

PS: Anything more than a very brief cameo for this character would be ridiculous.

Agreed, a cameo for the character is good enough and yes, I believe the "real" Sgt. Slaughter should play him on screen. Make him a grizzled, retired veteran to explainhis age. Boom, done.

then you'd go out on a limb and get egg on your face because the real Sgt Slaughter is 60 years old now but looks like he's 80.

Why not go with another wrestler. Possibley Steve Austin or Dwayne 'The Rock' Johnson?

Or a well respected actor who could work if Sgt. Slaughter had a bigger role is - James Gandolfini

You might be right about the license. But you know how much money the movie and Vinnie Mac stand to make and not to mention the exposure from wwe.

Also James Gandolfini would be good.

A cameo or a roll as one of the leaders in command after years of service would also do good.
I think

It would not surprise me at all if what became Brendan Fraiser's role was originally going to be a Sgt. Slaughter cameo, but the WWE decided to be a bunch of douches and wouldn't allow him to do it since they're becoming increasingly protective of their characters. Heck, I'm surprised they even let him appear in that Funny or Die video. So instead of Sgt. Slaughter in the flesh overseeing the training of the Joes, the character was re-written as Flint / Sgt. Stone and given to Brendan Fraser.

Yeah, but it wouldn't have been the Sgt. Slaughter-- it would have been an actor playing a similar character. Ultimately, if getting the actual Robert Remus to show up on set for a day wasn't doable for whatever reason, it made sense to just replace him with a different character.

Go with the real Sgt. Slaughter, just change his cartoony look to fit the times.

Bring the Real Sgt. Slaughter for a Cameo. The man deserves it. He beated the Nemesis Enforcer.

I'd would cast Chance Kelly. He's most notable in Fringe and Generation Kill. He may not have the size but he has the presence and authority of Slaughter.
