If Tony Stark was blind, would he be able to function as Iron Man?

I say yes, because his computer system would help him.

There was a time when Spider-Man got blinded for a longer period than usual by the Masked Marauder, he was helpless until near the end of the story he developed his radar sense much like DareDevil

Since it's the same universe, it could happen for Tony, or he might ask some of his crew to help him build something fixing his eyes, even if not for the aid of Extremis virus and his latest armor

I'm sure Tony Stark or Stark Enterprises would come up with some gimmick or gadget to help him.

This is like asking if Tony Stark didn't have hands. It's a terrible thing for his pornography habit.

He'd probably get by on the armor's sensors.

It would play a part- but probably not a defining one-long before "disabled rights" became fashionable, Marvel has Daredevil, a sightless superhero as well as a top flight attorney in his civilian identity of Matt Murdock, as well as the Shroud- not to mention strong supporting characters like Alicia Masters and Milla Donovan who are also blind!
