Captain America and Thor are two good examples of the studio playing it safe with them, since both characters are not dark and moody, they went with the basic by the book good vs. evil concept which is fine I suppose but then the movie starts feeling too lighthearted for my tastes.

Well I completely disagree with you on the Thor front. Thor certainly wasn't "good" at the beginning of the film, and audiences were made to question if Loki was really "evil", or if he was just a tortured soul.
