The movies don't have the time to go into all of that stuff, and that stuff isn't needed for the adapted version of the character.
The problem is so many X-Men have long standing origins and stories and developments that have led to who they are and people unrealisticly expect tham to be like that in the movie medium.
The movies can't condense that much down to a movie. In order to do many characters like they are in the Comics they will have to had set-up a number of pre-existing events to get them to that position.
Look at Cable, to get him "right" they have to have Scott return from the dead, have Jean cloned, have scott marry the clone, have them have a child, have the baby contract the techno-organic virus, send him to the future and return him from the future as an adult.
That's not feasible, it would take over the story and have to go on for five or six movies, all just so they can do one character perfectly how he was done in the comics.
Best they could do is have him as a standard Mutant future Soldier and leave his origin unknown
