Fall!
Current mood: hungry

Hey guys!

I got so excited this morning when I looked out the window! The light is starting to cool and get that slightly blueish hue that it does when fall comes! I really can't wait for fall to arrive! Enough of this 80-degree summer weather and cooling off with slip n slide and super soakers!! I have to admit fall has always been my favorite season! The golden leaves, the crisp morning air, wearing navy peacoats and striped scarves, drinking hot starbucks chocolate deliciousness! Even walking around with a wet head trying to catch a cold! There's nothing not great about fall! This will be my puppies first fall season. Don't worry, I'm not going to dress them in little hats and coats, that's too prissy for my boys! ..... Unless it snows, and then they might need booties!!!

Its almost my birthday, folks! I'm going to be 22!!!! An old maid! Haha!

Off to NY to celebrate with family next week. Hopefully will be able to share bday pics with you!!!

ps: this weather makes me hungry! I'm copying one of my favorite recipes from aTop Chef episode! It's a Butternut Squash Risotto that Lee Ann Wong made in Season 1. There's some serious deliciousness happening here, so I hope you all make it and enjoy!!!!

Recipe Below:

INGRETIENTS

1 piece Butternut Squash, cut in half lengthwise, seeds removed 1/4 cup Brown Sugar 
2 Tablespoon Vegetable Oil 
1 cup Arborio Rice 
1 piece Shallot, finely chopped 
1 Tablespoon Butter 
1/4 cup White Wine 
3 cups Light Chicken Stock 
2 Tablespoons Fresh Black Truffle,
chopped 1/2 cup Parmesan Cheese,
1/4 cup Whipped Cream

Place the butternut squash cut side up on a sheet tray. Combine the brown sugar and oil together in a bowl and rub the mixture over the flesh of the squash. Season generously with salt and white pepper. Place in the oven and roast until the squash is soft and slightly caramelized, about 40 minutes. Remove the cooked flesh from the skin (discard the skin). Puree the squash until smooth in a blender (add a little heavy cream for consistency if needed). Set aside at room temperature.

In a heavy bottomed pot, sweat the shallots with the butter. Cook until the shallots are soft, about 5 minutes.
Add the rice and cook over a medium flame for about one minute. Add the white wine and stir until the wine is absorbed, about 30 seconds.
Add the first addition of simmering stock, about one half cup. Stir over a medium heat until most of the liquid is absorbed. Add another addition of stock and stir until most of the liquid is absorbed.
Repeat the addition and stir procedure until the rice is cooked the way you like it. You may or may not use all of the liquid. The risotto should be creamy and a bit loose, but the rice should still have some chew to it...
Fold in the butternut squash puree and the chopped black truffles. Add the chopped chives, and the grated cheese to taste. Fold in the whipped cream last. Season with salt and pepper to taste.

After yesterdays blog about fall coming so quickly, I got to thinking about the end of summer! It's almost upon us! Summer is "supposed" to be about a healthy amount of laziness, no school!!, no work!!!, too much sun and hanging with friends and having fun. Hope you're all having a good weekend!

Just met up with my friend, fellow musician Matt Goss. He's a wonderful singer and songwriter. He's got an incredible voice, he looks like David Beckham and he's the perfect English gentleman. It makes you wonder if there's ANYTHING wrong with him, maybe he's got a funny toe or something. Just kidding, I'm pretty sure he's – as Mary Poppins would say – "practically perfect in every way!" He's got a stellar voice and great writing instincts and we're writing on a song together.

Texas, Texas!
Current mood: Lots of Ribs...

Hey guys!
Just landed in Texas. Here for a few days for work. I'm having fun already. It's raining and very humid but I'm going to do what I do every time I'm in this part of the country. EAT! I can tell you, they take barbeque really seriously down here. Going with some friends to grab some real southern bbq! Ribs, pulled pork, beef brisket, green bean casserole, mashed potatos, apple pie a la mode. Yummm. I'll let you know how it is! Here I am at the airport just landed, waitin' for my bags.
