Tia Carrere would have been a pretty decent choice back in the day but she's too old now. There are actually a few good candidates from Ninja Warrior Kunoichi. They would just have to give her very few lines, lol!

 Mylene Jampanoi She is Eurasian as Betsy should be (though not half-British and half-Japanese but half-French and half-Chinese), with natural bright eyes (which is very rare).
