I could name many, the first is One Piece, which seems to have been cancelled twice, the second one is Doraemon, i'm glad we got it here in my country, it's basically Phineas and Ferb, but funnier and without any musical elements, with more than 1000 episodes Doraemon would spawn even more internet memes than Spongebob and My Little Poney combined.

Kino's Journey
Desert Punk
When They Cry
.hack/SIGNS, Roots, Quantum, Liminality, Online Jack, Twilight Bracelet... The whole franchise in general, I guess.
I don't know if this is really underrated, but I'll propose Hanasaku Iroha.
Real Drive
Monster

Baccano! is honestly one of the best animes I've ever seen yet from my experience most people have never heard of it.

I found out about that anime a little over a year ago. I really, really like it. It's like Cowboy Bebop's distant, Chinese cousin.

A couple other anime I think aren't well recognized are Haibane Renmei and Planetes. The former I'm only a few episodes into, but, I really love how down-to-earth it is, even with the otherworldly atmosphere. The English dub is also pretty solid and sounds very natural, as if it were the original language it was recorded in.

Love both Haibane Renmei and Planetes.

I love the latter because of how true it is to real life and not over-the-top (though, I don't mind those). The characters act, interact, develop and face problems people in real life would, and the premise seems like something that could actually happen in our future (i.e. -- a section devoted solely to picking up floating space debris.)

I don't think I've ever seen a series quite like this. It's very unique.
