Right, so Devil May Cry 4 and Lost Planet both require these 5GB installations, right?
Before I get up in arms, like the rest of the internet, is it possible to simply just delete the data once you're done playing the game?

Of course. Nothing is permanetly attached to your HDD and it can be deleted.

Because they have to do it i guess. but if you delete the installation it dosent delete your gamesave so its not a big deal really.

Well if you have a 20 gig HD, or even a 40 gig, space is kind of tight. Imagine having to delete DMC4 because you want to play some of the Capcom game, and than when you want to play DMC4, you'd have to doa 20 minute install again.
