I actually prefer Odin kind of useless. Maybe I was spoiled by Dan Jurgens' run, where he killed Odin off and installed Thor as king of Asgard, but I kind of like it when daddy's not around to solve all of Thor's problems or trivialize Loki's legitimately dangerous, evil schemes by chastising him like a child and such. If he's alive and likely to stay that way (since I don't anticipate much patricide going on in a kids' cartoon), making him a relatively hands-off king is the next best thing.

Nah not me, besides alot of the problems Asgard faces are indeed Odin's problems and not Thor's.

My whole thing is, I don't really care who's more powerful than who or who should be fighting who or any of that petty bs. I just like to see the characters I'm fond of explored.

I do too. Thor gets explored more deeply when he doesn't have the crutch of his nigh-omnipotent father around to fix all of his problems. The only way to make Odin and Thor's relationship more interesting than that is to actively set Odin against Thor, which just winds up making them both look sort of like a**holes.
But it's early in Thor's career in the cartoon, so I guess it's not too bad that Odin's still around. There are some good stories that have come from his and Thor (and Loki's) relationship over the years.

I wish he'd hurry up and lose his eye already. Odin with his eye is like Aquaman without a beard of some sort. It lowers his badass quotient by 15%.

I know, but so did Thor. A much longer while. Only Thor's not allowed to have anything with Sif in the cartoon because the movies are all about Jane.

I finally saw the episode and I was impressed with Thor's nobility, it was nice seeing Odin show some concern for Thor after summoning Bill as well.
It was cool seeing a weakened Odin easily stopping Beta Ray's attack and overpowering him while still sitting calmly on his throne.

After watching this episode, I think Beta Ray Bill should be in a Thor sequel. This would be the way to do it. He could battle Thor at first but then gain the power of Mjolnir, and then later help Thor. It would be good to see Thor to find a kindred spirit and team up with a "brother" who shares the same nobility as him.
