Batman Arkham Asylum health bar help....

I just started play AA last night. I've played it for about an hr or so and while I got a handle on most of the actions (grapple gun, detective mode, analysis mode, batarang, fighting, etc), I dont understand the health bar.

The health bar is a circle w/ numbers in the middle. How do I see it w/o getting hit? What do the numbers mean?
When I fought a few guys, they almost killled me (my health bar was flashing red), then when I beat the guys it was replenished. How?
