Spider-Man, when the Green Goblin drops the pumpkin bomb in front of Spidey left me speechless.

I guess it would be at the end of Saw. Where Jiggs gets up off the floor, and seeing the expression of Adams face was priceless. Along with the theme music playing it made that sequence very spooky.
One scene comes to mind:
The chum scene in Jaws.
love that scene. followed by one of the best lines ever!
"we're going to need a bigger boat." !!!
That scene gave me chills when I was reading it in the book, it was so powerful. Seeing it on screen was almost too much for me. It was incredibleMost things in Lord of the Rings, but certainly the moment I will never forget seeing for the first time was the ride of the rohirrim from return of the king. That was just incredible.
Legend of Drunken Master: Most of the action scenes in this one are jaw dropping as well.
There's more, but I'm tired right now. I'll list some more tomorrow.
The Departed has two really great ones:
When Captain Queenan (Martin Sheen) is thrown off the roof, and everything just goes silent until he finally hits the ground. I remember when me, my mom and my brother saw it in the theater, everyone in there went silent. A brilliant sequence, and proof of just how great Scorsese truly is.
and
When Billy Costigan (Leonardo DiCaprio) gets killed. After all the **** he'd been through, throughout the entire movie, you'd think in the end they'd cut him a break and he'd get out alive. But the killing is so shocking, so unexpected (unless you've seen the original Asian version, Infernal Affairs) that ending it in any other way would've defeated the dramatic impact to a grest degree. Again, great proof of how great Scorsese is.
Other moments:
The "Tiny Dancer" singalong in Almost Famous
The Nazis' head exploding in Raiders Of The Lost Ark
Jack Napier's (Jack Nicholson) reemergence as The Joker (when he kills Grishom, played the late, great Jack Palance)
The revelation at the end of The Empire Strikes Back
The lady in the bathtub in The Shining
Phoebe Cates' nude scene in Fast Times At Ridgemont High
The photographer (David Warner) working with Robert Thorne (Gregory Peck) getting decpatitated in The Omen
The little boy getting devoured by the shark in Jaws.
