I have fallen in love with Sages back story and how she was trained to be a spy for Xavier but should this make her one of the Original x-men or something different? spy, x-men etc.

I think the O5 is called the O5 specifically for a reason, they were especially emotional-attached, what with their day-to-day training and living closely to one another...

Sage...had come a little too late into their lives to make that kind of bond, my affection for the O5 doesn't extend to her.

I can think of the O5 as the ones on the bright side; her as the one in the dark.

Um no. Sage wasnt an X-man until Claremont reinvented Tessa as Sage with X-treme X-men.

retcon or not she wasnt part of the originals. The original X-men were Xavier's original 5 students at the mansion. She was a spy seperate from the group. Essentially she was an undercover ally that they didnt know about but that does not make her an X-men. Even when she started hanging around the mansion, she didnt get official status till she took up Storm's offer to join the team and left with them to search for Destiny's diaries
