I do like how Jon challenges Ramsay to one on one combat and Ramsay obviously refuses.

Why would Ramsay fight him out in the field and not from a strategic fortified position in Winterfell? Is it because he has him outnumbered by so much? Totally leaving his flank open for Littlefinger and the Knights of the Vale to destroy.

The Vale Army should be more than enough. Remember, Littlefinger was originally supposed to destroy whichever side survived between Stannis and the Boltons, so I would guess he has around 10K for the job, and he will ride in Theoden-like to save the day.
