The obvious one is Hendrix' version of 'All Along the Watchtower' but Rush put out a pretty good short CD of covers a few years ago. Their version of 'Crossroads' is damned good.

Thats one of my favorite covers too. Jimi also did a great cover of Like a Rolling Stone imo.

I just discovered the Hangin' Out On E Street series which has a lot of fantastic Bruce Springsteen covers, my favorite being The Avett Brothers' Glory Days.
