Across any genre, who do you 'fancy' or find most attractive (male or female) in film(s) and in what film do they most present the reasons or imagery or style as to why you fancy them ?

I don't know why, and I know he hated the wig he wore for it (he said it looked like someone glued roadkill to his head), but I find Tom Hardy all kinds of sexy in Tinker Tailor Soldier Spy.

On top of my head :

Liv Tyler : LotR, she was so delicate and elfy looking
Zoe Saldana : Avatar, I fell "in love" with the character, cat like and all
Angelina Jolie : Hackers, a cyber punk elf out of a geek dream
Edit
Olivia Wilde : Tron Legacy

I don't know why, but I don't really have crushes or whatever on FAMOUS people. Growing up, I even preferred listening to unsigned bands over famous ones...so it's just a thing with me, I guess. Most of the actresses that I have "celebrity crushes" on would not even qualify as celebrities because they only get a few bit parts every year (like, their highest profile gig is as a patient on an episode of Chicago Med or something).

That said, Alexandra Daddario is pretty darn close to perfection...but I thought that when I saw her in a Yellow Pages commercial years ago.

Jenny Wright as Mae in Near Dark. Look at her. Hay-colored hair, big eyes. She's a little blood-spattered angel... Oops, wrong movie. But still it's true.

Ashley Laurence as Kirsty Cotton in Hellraiser. My childhood crush. I was terrified of the film, but also in love with Kirsty. Difficult experience.

Lizzy Caplan as Marlena Diamond in Cloverfield. Lizzy is so cute with that hairstyle and earrings.

I have to agree with you there I fell for her when I saw her in the first Percy Jackson film been a fan ever since

Emma Stone in virtually anything, although to pick 1 it would be Crazy, Stupid, Love. To quote a line from the movie "she's the perfect combination of sexy and cute".
Mary Elizabeth Winstead - Scott Pilgrim Saves the World.
Lizzy Caplan - Cloverfield, although it was her appearance on True Blood that made me notice her.
Kristen Bell - Forgetting Sarah Marshall, again it was TV that first put her on my radar (Veronica Mars)
Amanda Seyfried - Mamma Mia!

And yeah - grew up crushing on both Anakin and Padme.

Tessa Thompson, Elizabeth Olsen, Saoirse Ronan, Vanessa Hudgens, Hailee Steinfeld, Evanna Lynch, Zazie Beets, and more I’m definitely forgetting.

I really like Vanessa Hudgens, I just actually haven't seen one of her movies, lol.

A few more.

Olivia Thirlby as Cassandra Anderson in Dredd.

Mia Goth in basically anything. She's pretty in an unusual way, weird and she has the bestest name ever.

Tao Okamoto as Mercy Graves. She looked so good on Luthor's party. Dress that looked like it's made of glass, hair and make-up... Oof.

Well it was a tough call, but ultimately I have to go with Rachel McAdams in Wedding Crashers. That's the first movie I saw her in and it sticks with me as the one where I think she's just beautiful beyond compare.

Other than that, in no particular order of the ones I can think of most that I have a crush on:

Emily Van Camp in the MCU (I love her eyes)
Evangeline Lilly in The Hobbit
Cate Blanchett really got it going in Thor: Ragnarok.
Gal Gadot in Wonder Woman.

And I know no one doing it, but in the name of fairness and if someone is gonna put me on the spot to list an actor - Luke Evans. No particular film, but since I think he looks best with shoulder length hair, we'll just say Dracula Untold.
