Why don't we eat more Bison/Buffalo Meat?

AFAIK its even better than chicken or fish for your health, more proteins, less calories, its really tender and tastes good.
But how come it never caught on?
Ted Turner tried to bring it to mainstream but failed.

because there isn't much market for it, if it were mainstream it would be alot cheaper

Agreed. You've gotta cook it a bit differently b/c it's so damn lean. There was a restaurant that had an amazing bison burger; I went there a few months ago and the bison and kobe beef burgers were taken off the menu b/c nobody was ordering them. Shoot, I'd have gotten 2 everytime if I knew they were struggling to sell 'em :

Well, Bison are an endangered speices, so raising them for food is probably much more expensive.

Maybe it was just the cooking quality, but I didn't find bison to be anything terribly exciting. I've had it several times.

BTW, what happened to M. Bison?

They don't roam in massive herds like the did in the old days before the settlers, but they're certainly not endangered anymore. They are a part of US agriculture so the popluation size is mostly controlled by humans.

I had a bison burger when I was in NC back in 09. It was good, but it didn't really live up to the hype like the waiter said it would. I would certainly love to try a bison steak.

I have had buffalo sausages, they were not bad. But I wasn't blown away or anything. I did have a buffalo burger once at this small little restaurant and it tasted good.

I have had moose and deer meat as well. Don't care much for moose meat because of the taste. Deer was a little better.

Nah, I got one for like $6 at a bar back in October. Was delicious.
