Really tough narrowing this down to just five.

1. Raiders of the Lost Ark. The truck chase through Egypt.
2. Ronin. The Paris chase scene.
3. The Bourne Supremacy. The chase in Russia at the end of the film.
4. The Road Warrior. The tanker chase.
5. The French Connection. Popeye races a freakin' train!

I would also add the the car chase scene in San Francisco in The Rock, as well as the night time chase scene in Heat.

I'm going to try and narrow it down to car chases where a car is the primary hero vehicle, although my #1 does split it's time with a bike lol. Honorable mentions to the SS Chevelle vs the Assassin and cops in Jack Reacher, The French Conncetion elevated train chase, The Matrix Reloaded Freeway chase, The Paris chase in Mission Impossible: Fallout and the Batmobile chase in Batman Begins.
