Polarization is also an organic chemisty term but it has to do with an atom's electric charge and how the molecule orientates itself into a certain shape. But yes, polarization has to do with light in physics.
Polarization in reference to light is the filtering out of all the waves that are not oriented in a particular direction. Think of the light waves as passing through slots. All the light waves that are turned so as to fit will pass through, the others will be blocked. This is what polarized sunglasses do. That however is about the limit of my knowledge on the subject.
