Actually, it does. It has to do with a very careful distribution of forces. I couldn't explain it, but I have a very basic understanding of how it can work. The key is the interlocking pattern.

Though they seem radically different, this is actually extremely similar to the hammer/ruler demonstration. Understanding how that works will put you quite a ways towards understanding how the coins can be stacked and hung over the edge.
