Chris Evans appeared as a Cameo in Ant Man does that count as one movie?

Not really. A daily from another movie doesn't count.

And it depends. If Marvel enforces your contract, then that's one of the options (i.e. movies obligated to do). But if said actor does it willingly and not have it count towards his contract, then it doesn't.

Evans was in the last Thor movie, but that didn't count against his contract.
