I don't think so. Unless Microsoft changed something, you can only use flash drives up to 16GB.

Damn because I am looking to move away from constantly having to buy DVDrs to save stuff. So I am looking into stuff like USB Flash Drives etc

Editing video projects / Music stuff etc & its not off of the 360. I want to have to stop buying a bunch of blank DVDs & find an alternate way to view stuff such as video projects outside of burned dvds

Isn't that what the whole Windows Media Center stuff is? I never really looked into it, but I thought you linked your PC and 360 and could share video content between them.
