Star Trek is about exploration, so non-lethal options should be priority, thus they are used more.

Star Wars is about war, so killing your enemy is the priority, thus non-lethal options are not used.

There are beanbag rounds for shotguns in our world, so it makes sense there'd also be nonlethal options for blasters/laser rifles.
