No, it's a play on words. He said no man can kill him in a general sense that nobody can defeat and kill him... yet it was a woman that did.

The prophecy Glorfindel told about the Witch-King of Angmar was "Far off yet is his doom, and not by the hand of man will he fall."

So in theory a man could defeat him, but it was prophesied long ago that he would fall by the hand of someone who was not a man. Make sense?

Also, its not certain that he can be "destroyed" or "killed" at all. It seems more likely the Nazgul are simply banished from the world when defeated (hence Gandalf's "go to the abyss prepared for you and your master!").
