I thought he joked around plenty but he didn't over do it. Some scenes in the series would just be totally ruined if he started joking, because they are too serious. Last fights with Goblin, Ock, and Venom.

There were one liners,the problem is,his demeanor was lacking humor altogether...in order to be successfully sarcastic you have to have a back bone and not over-sentimentalize everything from your love life to the villains.
Aaron Johnson's Kick Ass was funny and had the right mix of clumsiness and clever quips....Tobey's Peter had a considerable lack of social skills(just watch his cringe-worthy scene with M.J in the hospital) and provoked more pity than admiration through his adventures in the trilogy.
The second movie had that part minimized but the first and the third presented him as pretty much a pathetic social infant rather than a lonely superhero with a sarcastic side.
