The Coens for me. I've not seen all their films, but I've been more impressed with their work than with Tarantino's. I like their dialogue better and they're not reliant on stylish violence the way Quentin is. In fact I'd say they do a good job of not glorifying the violence found in their films. And with the Coens you have versatility to take into account. I like how they can go from a broad comedy like Oh Brother! Where Art Thou? to a violent thrillers like No Country for Old Men. Tarantino seems content with his niche of making big budget versions of grindhouse cinema, which he's quite good at though.
