For some reason, even though I'm Chinese-Canadian, I've got a thing for American Civil War movies. I don't know, maybe it's the unique tactics of the era, when you still had horses, swords and spears (bayonets) combined with old firearms and new innovations that would hint at modern weapons.

Gettysburg, Glory are ones I like, also The Good, The Bad and the Ugly (the civil war setting plays a huge role in the story).

Braveheart count?

Critically, I'd say Saving Private Ryan, though Three Kings is my favorite. It's not about the Gulf War itself, but the reasons behind it drives the characters and plot.

The Boy in the Striped Pajamas
The Great Dictator
Mash

The Thin Red Line (1998)
Paths of Glory
All Quiet on the Western Front (1929)
The Human Condition
Grave of the Fireflies

All Quiet on the Western Front is probably the best anti-war film ever made.

For war films in general, Saving Private Ryan, Fury, and Glory are definitely right up at the top for me. And the Band of Brothers miniseries.

WW1
All Quiet on the Western Front
Lawrence of Arabia
Paths of Glory

WW2
Das Boot
Downfall (Bruno Ganz deserved an Oscar nomination)
Patton
Saving Private Ryan
Schindler's List
The Pianist

Vietnam
Apocalypse Now
Full Metal Jacket
Platoon
The Deer Hunter

Lawrence of Arabia. My favorite movie of all-time.

Grand Illusion, one of my favorite movies of all time.

Schindler's List.

Winds of War and its continuation War and Remebrance are also pretty special as miniseries.

Glory
Saving Private Ryan
Inglorious Basterds

Then again I haven't watched many war movies from before the 1980's.
