Easier than believing we gradually evolved from tree dwelling primates by the trial and error of natural selection, mutation, and population bottlenecks due to environmental catastrophes over hundreds of millions of years.I have a hard time understanding people actually literally believing women grew out of a man's rib bone.

I've heard that exact line from my parents before. I don't think people who question/reject evolution are stupid, but plenty of their arguments are.
For example my mom insists that, since humans are special and created in God's image, the idea that we evolved from a lower-life form is heresy - this makes no sense when you consider that Genesis says God created us out of dirt.
For the record I am religious but I just don't see any point in denying something that totally 100% factually happened.
I think you hit the nail on why it's so hard to imagine for some. This notion that our existence is any more special, even 'noble' than any other animals on the planet. I think this is also the reason why it took us so comparatively long to discover evolution in the legacy of scientific history. It's just so obvious. Like D'OH.
There is a large vocal swath of people that hold these idiotic world views but there is an even larger amount of individuals like you and me who have no problem understanding science is a fact and does not disprove one's faith/spirituality.

I myself find it pretty liberating. That we are made of the same essential stuff as other animals and trees. It broadens my empathy.Yup.
