I like seeing Anthony Perkins in stuff like this; it feels like we could go back in time and give him the career he deserved.
It would be hard to make Fight Club in the early 60's. But in the LATE 60's, whoo boy The Hays code had wrapped up, and Hollywood was in that glorious EXPERIMENTAL phase that gave us goodies like Rosemary's Baby and Straw Dogs. A movie as violent and subversive as Fight Club would fit right in.
Also, Fight Club was very much about the malaise and frustration felt by the Gen-Xers at the turn of the millennium. You put it in the late 60's, then it's about something quite different; in the midst of Vietnam and the Cold War among other things, those guys had a whole different set of anxieties. I'd love to explore this further.
