I sometimes get around that by casting name actors at a point before they've had their breakout.

But you also have to choose actors that are the right age. For example, in 1950 Elizabeth Taylor was only 18 years old, making her a good fit for Nancy Thompson in A Nightmare On Elm Street. Lucille Ball was 39 in 1950, making her the right age to play Nancy's mom.
