I will never consider a Superman/Lex Luthor story any kind of “demotion” for Superman.
How in the world did Superman, "share the spolight" with the Justice Gang? Lex and Lois were a far bigger part of the movie. Is it because they also have super powers?I think I'd be less annoyed by the demotion if Superman didn't already have to share the spotlight with the Justice Gang on the first movie, and the fact that it's going to happen again frankly kinda tells me that Gunn is not really interested in telling a "fully" solo Superman story.

Yeah, Luthor’s gonna be a way bigger part of this than Dent is in TDK. And that’s a HUGE role.
I like it, feels like a bold creative choice. I think it’d be cool if he was straight up THE LEAD. Like fully the POV character even if the story is about Superman in a lot of ways, you’re consistently seeing it through his eyes.

This isn't really a feel thing. You'd have a better argument if you said it the story belonged to Bruce, Gordon, and Harvey. But even then, it doesn't. It's film about Bruce. Harvey Dent is a contrast to THE DARK KNIGHT. Which is weirdly, the title of the film. They literally have him date Bruce's love interest.Wasn't one of the main driving points for TDK about Harvey Dent's fall from grace? Hence, why they invested so much time in establishing his character as Gotham's White Knight before his turn to Two Face.
If I'm wrong in my assessment, would Deadpool and Wolverine be a better example for the whole co-lead situation (e.g., story told mainly through Deadpool's POV)?

I feel like Deadpool 3 is a really good movie to test the idea with. Because while they sold it as "their" movie, it's clearly Wade's. it's revolves completely around Deadpool. It's his style (super meta), it opens and closes on him, and even Logan's story is told through Wade's lens, and Logan's "growth" is directly tied to Wade who himself is looking for that same growth.What you just described there is a subplot. Deadpool and Wolverine is definitely a bit MORE of a co-lead situation, because their relationship and their scenes TOGETHER are what drive the movie, but it's still a Deadpool movie at the end of the day 100% imo.
Other characters having big arcs does not signify a co-lead scenario, just good writing. If your supporting characters don't have proper arcs/journeys, you have a pretty flat movie, imo.
