the easiest way to tell is to see if the chat is encrypted.
If it is, then you're chatting with an Android. If it's not, then you're chatting with an iPhone.
I dunno if it's possible to customize the bubble colors on a Samsung, but it is on Pixel's. So what I've been doing with every iPhone conversation I have, is customizing the color of the bubble to green.
