They only really started to develop Mystique in First Class. And in First Class, it was like a completely 180 to the Mystique that we saw in the original trilogy. Mystique was awesome in the trilogy but we only got to know few personal details about her in the original trilogy. And most of the time, she was just someone who was taking orders from Magneto.

With Jean, despite appearing in smaller roles in The Wolverine/Days of Future Past, she was still very memorable and they really played her death really well in those 2 movies.
