...in person, what would it be? You'd be there on set, off to the side, watching the scene be filmed in its entirety.

I'd choose Travis' "You talkin' to me?" scene from Taxi Driver. It's one of the most iconic moments in the history of film and De Niro pretty much made the whole thing up on the spot. Not only would I watch De Niro, but whoever else was on set that day, looking at their reactions.
 
_ Robert Mitchum's right hand/left hand speech in Night of the Hunter.
_ The opening scene in the Korova Milk Bar in Clockwork Orange.
_ The "Blood test" scene in The Thing.
_ The precinct scene between the Joker and Batman in TDK.
_ "Do you think I'm funny?" in Goodfellas
_ Quint's monologue in Jaws.

and many many more
 
He didn't die on screen.


Personally, I'd say none. I think it'd ruin the magic of the moment to see the various takes and screw ups and all that stuff.
