Top three favorites:

The Godfather Part II- it's truly perfect. It's one of the reasons why I've never watched the third and don't want to.

Fight Club- I find something beautiful about two people holding hands as their world blows up around them. And then the best 4th-wall joke ever. Haha

Goodfellas- Tommy D unloads a revolver at the audience. And of course, Henry still wants to be a gangster.

The end of Sherlock Holmes 1, when Holmes realizes that Moriarty fooled him and was after the remote controller, not the poison.
 
I'm surprised nobody mentioned 2 of the most classic endings in Sci Fi, (though not technically the last scene of each movie, it is the defining & climactic moment the entire movie was building up to:

Close Encounters of the 3rd Kind - the Mother Ship appearing & turning out to be bigger than Devil's Tower, plus the scene where the aliens select Roy Neary to go with them over the handpicked agents, as well as the last alien communicating via sign language...and a smile.

Superman II - not the scene where the bully who beat up Clark gets his, (though that was good too), but the scene where General Zod makes Superman take his hand & "declare eternal loyalty to Zod". Then when Superman takes his hand, crushes it, lifts Zod over his head, gives HIM that smug cocky look he had for most of the movie, and then flinging him across the Fortress, wow that was awesome. Everyone was waiting for Zod to get his the entire movie & when he finally got it, it was worth the wait!
 
There are plenty of films that I forgot or failed to mention for sake of brevity, but I will make special mention of this one which I really should have remembered.



The best scene of perhaps the best Western ever made.

The whole 'first rule of flying' bit is a wonderful little speech. More than that, it neatly bookends the movie and contrasts Mal's viewpoint with the Operative's. At the beginning, the Operative says that 'love is something far more dangerous' than madness. And for him it is, since it can't be controlled, and control is needed for the Alliance to make their 'better worlds.' But for Mal, love is something more important than 'buttons and charts,' more important than control.
 
The Hidden...

I've never known the true ending since it's kind of left up to the viewer. Some people believe the alien gave his lifeforce to Beck to revive him. I've always believed the alien took over Beck's body after he died and his daughter could sense it. No dialogue is said but the look on her face suggests she knows that's not her father.

I must say that The Road Warrior ends on pretty much the most perfect note possible, nailing the tone of the film as well as leaving Max as this wonderful legendary figure.

The great thing about the Rocky ending is that he loses, but it doesn't matter. It wasn't about him winning or losing, it was about him proving his worth. It has a heart that its imitators usually lack.

That said, there is one film that goes with the more formulaic ending that pulls it off magnificently.
