Blu-ray Movie Editing - Thoughts?

I don't think it's disrespectful unless you distribute it online. but if it's for your own personal feelings, it's completely fine.
 
i'd look at that as a hobby and in some cases it could actually improve a movie if done right. i could give a **** about a director's film being tampered with if I'm just doing it for myself and to show friends. There are plenty of movies you'd have to agree that could have done with out those 1 or 2 moments that were cringe-worthy in a good flick.
 
I think the big question is, would you re-purchase some movies if they allowed for you to be able to do it?

For instance Spider-Man 3 or Transformers 2?

Spider-Man 3 maybe but I don't think any amount of editing could save Transformers 2, at least if you still wanted a coherent film and not just action scenes back to back.
 
When you go out and buy a painting for your house, do you then pick up a brush and start altering it?
