This might be a strange but daring idea. What if they use a redheaded [blackout]Emma Stone[/blackout] but keep her appearance limited to the stinger of the last movie?
Imagine the scene as follows:
Gwen Stacy dies at the hands of the Green Goblin (or some other villain) in the second movie. Cue much angsting. Peter finally comes to terms with it, is at peace with himself and is ready to move on towards the end of the (third and) final movie. Throughout the third movie (which takes place a year or two after the second), Aunt May continues to try to set Peter up with the niece of a friend in an attempt to help him move on.
Then, the stinger is when they meet for the first time (e.g. to fulfill some social obligation of Peter's in which he needs a date/+1). She rings the bell. Peter opens it, revealing a redheaded Emma Stone who smiles and greets him with the phrase, "Face it, tiger, you just hit the jackpot.".
I... am speechless. lol sorry...
Lol. Though to be fair, this is a common trope used in stories to turn a tragic/bittersweet ending into a happy one.
