For me it's hard to choose just one specific game music. When I think of memorable music I think of Metal Gear, Mike Tyson's Punch Out, Mega Man(all Mega Man's had memorable music, Hitman, Castlevania, Final Fantasy, Zelda, and Super Mario Bros.

I'd have to go with Halo. I'm not saying Halo's music is the best, but it's the only video game music that randomly bubbles up in my head without my noticing. Particularly that theme from when you're driving the Warthog around on the beach.
