According to that AICN scooper (http://www.aintitcool.com/node/40410), Odin has a very small role in the movie. Having read the first draft, yeah, I kinda agree with that. He has like 10-15 minutes of screen time.
It sort of reminded of the Marlon Brando situation in Superman: The Movie.
What if they're thinking big, I mean, really big, for the Odin part? Alexander Skars is not really well known, so it fits getting a huge star for a small but important part, just like Donner did with Brando in S:TM.
Just a thought... but it could happen. My question is: who is that big of a name today?

That's been my Odin point. Splurge on this role even if it's short like Marlon/Superman and I believe the audience will increase.I hear ya. If they could get Connery back to work, the movie would get a lot of mainstream attention.
As fun as it might be to see Stellan as Odin if Alexander Skarsgard is cast as Thor, Vladimir Kulich just exudes "Odin" so much that I can't think of anyone who would be better in the role.
