They could make Tobey's Spider-man an aspiring scientist married to MJ and Garfield's Spider-man a teacher which sets them both up as older versions of Peter on slightly different, but still uplifting paths.
Both those would be fine, but in general I don't think killing either Spider-Man would really do anything good. Garfield dying would bother me less cause I am less attached, but in general I don't think it is a good narrative move. We just had Tony die in Endgame, and trying to kill either alternate Spider-Man comes off as trying to do the same thing, only it has less meat behind it. Sure, we the audience may be attached to X Spider-Man, but Peter in the movie would only have met them just now. It just doesn't have the same impact that moment where Tony died does. Ultimately, I think the story is better served by each Spider-Man somehow inspiring the Holland Peter in a way relevant to the themes of the movie.
I feel like fans always default to having another character die in order to teach another character a lesson, and that is not always the best path in a story. Stakes and character change can be achieved in other ways that can be even more creative than some stock death scene.
