The books that are now cannon such as Heir to The Jedi, Tarkin, Lost Star, Aftermath are quite good to dive deeper into the mythology of Star Wars. Heir to the Jedi is a great Luke Skywalker story that does a good balance of showing the transition of Luke character post-A New Hope and just before we find him in Empire on Hoth.
