I was wondering are these stand alone games like Final Fantasy or actual sequels ?

They're stand alone for the most part. Some of the games take place in the same universe, but beyond that I think they're pretty much unconnected plot-wise.

Tales of Symphonia for Gamecube is the original and the upcoming Tales of Symphonia: Dawn of a New World for the Wii is the direct sequel to the first game.

Tales of Vesparia for the 360 is an original story that takes place in the Tales universe.
