First, let me just say that I think Bryan Singer is a very competent director, but I think that Alex Proyas is more skilled at balancing intelligence and entertainment.
Just watch I, Robot or Dark City and you'll see what I mean.
I'll start with the list of the current cast members who I thought were absolutely ideal:
Patrick Stewart (Xavier) He was born to play Xavier. Period.
Hugh Jackman (Wolverine) I wasn't sure when I first heard of his casting, but no I think there can be no doubting his fit for the role.
James Marsden (Cyclops) I think Marsden pretty much is Cyclops.
Kelsey Grammer (Beast)
Brian Cox (William Stryker)
Ian McKellan (Magneto) McKellan is always great, so its hard to imagine anyone but him being Magneto at this point.
Ray Park (Toad)
Famke Janssen (Jean Grey/ Phoenix) I think she did a great job.
There are a few that I thought played a character well, but the way they changed the character was unsatisfactory:
Rebecca Romijn (Mystique) I think she did a fine job, but I rather disliked the makeover they gave Mystique for the movies. The semi-reptilian thing just doesn't cut it.
Kelly Hu (Lady Deathstrike) Once again, the casting is not a problem, but the character wasn't really Deathstrike except by name.
Alan Cumming (Nightcrawler) The angelic skin-carvings was a bizarre idea, I thought.
Vinnie Jones (Juggernaught) He would have been pretty cool If only they hadn't given him such horrendous dialogue.
Halle Berry (Storm) Berry is a good actress, so I like to think it was not her fault that her version of Storm didn't really work. Poor dialogue and a lack of an African accent seemed to ruin the whole endeavor.
Some I thought were adequate, but didn't really stand out. (Probably because they were relegated to minor characters).

Shawn Ashmore (Iceman)
Ellen Paige (Kitty Pryde)
Daniel Cudmore (Colossus) Singer should have had him keep the Russian accent at least (unless it sounded awful)
Aaron Stanford (Pryo)
Meiling Melancon (Psylocke) She seemed pretty cool, but why they minimized the character so much is beyond me.
