Cinderella was the point where the films started focusing more on kids and families than adults..

Maybe as far as animation quality appreciation, I get what you are saying, but as far as story, kids and family always seemed the focus of Disney.
Maybe the novelty wore off for some adults.
That said, even as a kid I instantly recognized the better quality animation of the golden age classics, so that's pretty dismissive of kids being able to appreciate that level of animation too. Although I was drawn to some more than others, I loved Fantasia purely for the experience of animation and music and could somewhat recognize it for that.
Weren't they always for all ages.

Mulan is my personal favorite, even more so now that I've realized that Mulan herself is voiced by Ming Na-Wen of Agents of S.H.I.E.L.D. (How did I never know that?)

I'm partial to Pocahontas - I have no clue why, though. I think it's just for "Colors of the Wind" which is absolutely my favorite song from an animated Disney movie.

101 Dalmatians is one movie that I treasure - it was one of my favorite movies as a kid, and it still is one of my favorites now. Cruella is possibly the greatest Disney villain ever, though Scar is also pretty awesome.

I really like The Lion King, Beauty & The Beast (though I haven't watched it in forever), and I enjoy Aladdin. The Little Mermaid is okay. Never liked Tarzan or Hercules.

I adore The Emperor's New Groove. That movie is fantastic.

Atlantis is one that I enjoyed a while ago, but hate now.

As for the newer ones, I liked Frozen more than I expected to, and I think Moana was pretty good. I really don't care for Tangled, though.

Aladdin. I had that movie on repeat in my house as a grown man with no kids at one point. Those were the days.

Probably would have to go with Basil The Great Mouse Detective, an absolute delight. Very charming and funny and Vincent Price is clearly enjoying himself. I would have also said The Many Adventures of Winnie the Pooh but I'm skeptical to include that as technically it's a combination of separately released short movies isn't it? But the one that dominated my childhood was Pinocchio
