If they stick with canonity, it'll either be Jackie or Tenshinhan.

I think that choice would be great, if Piccolo isn't in the tournament... But he most probably is, and he should be defeated by Goku on the finals

It was wonderful how Goku's part in tournaments was handled in Dragon Ball, so, I think is the same deal here...

EDIT: Oops, misread :P In the beggining, I would go with Roshi, either disguised or not... I think he should be considered by the audiences as the most powerful human, but still overpowered by Piccolo
