Because that would require getting Thanos into such a position first. Also, given that Thanos is considerably stronger than the Hulk, he might not be able to move the hammer, but he could almost certainly move the *ground* he's trapped against.

Note that when Loki was pinned by Mjolnir, he was pinned to the Rainbow Bridge. The same Bridge that provably required multiple strikes by Thor using Mjolnir to break. Which is to say, it was a hell of a lot more durable than any random earth rocks or clay.
 
I guess Thanos could have laid down for the plot like a professional wrestler, maybe Dave Bautista could choreograph the move.
 
Once he's on the ground and helpless Thor could just decap him with Stormbreaker.

Interestingly enough they had him down in just said a position in the begging of the movie with less Avengers to lay such a Hammer on his Chest where Thor decapitated him the first time....

Are you forgetting that the Thanos at the start of the film was hobbled from using the Gauntlet twice in less than a month? Therefor the Thanos at the end is far more formidable than the one that the Avengers overpower at the start of the movie? This is quite clearly shown in the movie.

Not too mention the 10 Thousand or so more Troops the Avengers had with them to confront this more Formidable Thanos...
