keep the markIII but with certain upgrades.

end with the markIII armor destroyed and the design for extremis on tonys comp screen.

Since he has the suit assembled around his body in the films, it should be easy for him to customize it on the fly, perhaps getting a slightly different look each time.

i would really rather the movie be based around a solid story than how many different armors could be fit in for the fans. sounds like "x3: volume 2"

Keep the Mark III with upgrades, like a Stealth mode, a Force field, Sonic waves and such. War Machine, obviously, and, if they could fit in it, a underwater version and sketches of the Hulkbuster.

I would like if they set-up the Ultimate suit for Iron-Man 3.

That Ultimate suit sucks horribly. They need to keep the one he has and just add on new amenities.

Though cool, I never really understood why he had to build several different suits. Why can't he just build one suit that has stealth, can go underwater or fly into space? I can understand building something like the WarMachine armor because that thing is equipped with all kinds of different weapons of mass destruction.

But seriously, building an armor that can fly into space and withstand high pressure shouldn't be big of a deal.

Well to be sure the Mark 3 can go into space and under the sea but the air supply is very limited(an hour at most) so his more specialized armors are for extended periods(up to a couple of days). He also has the armor he used in Hypervelocity which had the rod of some sort extend ahead of the armor so he could travel at supersonic speeds under water.
