I do't think people want to see a Shrek 3. They will all remember Shrek 2 which had big numbers, but once you saw the movie, it seemed weak, which will make movie goers assume the third one will be weak.
Spider-Man will aleady have a huge opening weekend with massive word of mouth advertising before either one of those comes out. Spider-Man 3 is going to be bigger than both of those, and depending on how good it is, it might be bigger than both of those put together.
