One of my two favorite belts had a (winged) eagle on it, so I just don't question it and accept the eagle.

I think it's because eagles are seen as majestic and powerful, and being that the WWE is an American promotion, patriotism probably has a lot to do with it it to. It's just classic championship imagery, along with gold, crowns, jewels, and globes.
