What is Sylar doing with the brains? I know he steals the powers, but the brains are missing. He is not just reading/examining them. My only conclusion so far is he is consuming them.

he's a psychopath. what more explanation do you need?
By proximity he can't (or couldn't) control it. Like when he was close to Claude, he didn't realize that Claude had the power of invisibility - he was just near him and disappeared. When he is "out of range" of the person's power he sponges, he can only bring it back by thinking of that person. If he didn't know that person had a power, how would he know to think of them? But he was able to heal himself with Claire's powers, even though she never used them in front of him and he didn't know she could even do that, right?
Thank you. When he is in the vicinity of people, he does it automatically. I dont even think he realized he was invisible when he was with Claude. To use his powers without being near someone he has to remember them or feel the emotional trigger that they made him feel which be the only way to explain the telekinesis since he didnt remember Sylar had that power right away.

He said as much when Claude threw him off the roof. Claude asked him what he did to use the power of invincibility and he says he thought of "the cheerleader in Texas."

you know, you once tried to steal your sisters powers didn't you?Remember that episode when Hindi Guy and Eden broke into Skylar's home and found a lot of brains inside jars? No, he does not eat 'em. At least not raw. Raw brains have an unpleasant taste.

that's the point i made earlier (maybe not in this thread though...)But it must be activated on a deeper level than that. Peter didn't consciously think of Sylar when he stopped Claude's attack with his mind... yet he certainly used Sylar's telekinesis to do it.

Peter knew Claire's ability. she either told him in Homecoming or when she visited him in the clink. actually, it may have been Peter who asked if she's a healer. anyway...they had a conversation about it.because he knew that he leeches abilities from proximity
so if he leeched healing while Claire was around, then obviously Peter rationalized that Claire had that ability
