SPEW is definitely one of those things that works in the books but wasn't necessary for the films. It's been over ten years since I last read the books but if I remember it right, the big payoff to the SPEW storyline was a combination of Ron finally coming around and being concerned for the house elves during the Battle of Hogwarts, which was the catalyst for Hermione kissing him, as well as the house elves joining in the battle against Voldemort.SPEW works great in the books, but it's not very pertinent to the central conflict of Harry trying to survive the Triwizard Tournament and solve who put his name in the goblet of fire. Would I have liked to see the sphinxes in the maze? Sure, but the movie would have stopped to a dead halt if Harry has to stop and solve some riddles before getting to Voldemort.
Really the most glaring omissions for me came from Half-Blood Prince. People LOVE that movie, and while I agree it's a very well crafted film (overly dark lighting isn't my cup of tea but there's no denying that it's the best looking Potter film besides Azkaban), there's too many important elements from the book that are missing. Namely, Dumbledore meeting with the Dursleys, a good chunk of Tom Riddle's flashbacks, and Dumbledore's funeral. Those are more relevant to the overall story than the added scene where the Death Eaters attack the Weasley's home.
